” came about through my friend “Afo
” and it has been making a huge statement for me. The fact that I can send e.g. Pancakes to other states is even what has remain a stamp in people’s heart.
I Love Cooking and if it’s not one of your fave to-do, then you’d understand how stressful it can be but I so love it. Cooking for me is therapeutic.

know we all have different ways we make our food but two of my clientele favorites are the Anointed World-Best Pancakes and Hibiscus Wine (Zoborodo), you have to taste or try out my recipe to understand why. Your taste-buds will even thank you.

Don’t let anyone tell you that cold Pancakes aren’t nice . Granted, everyone has their preferred taste and all but Pancakes 🥞can also be enjoyed cold.

The Unique Tasting Pancakes Recipe
2 (400g) cups all-purpose flour/coconut flour
1½ tablespoons baking powder
1 sachet powdered milk flavour
½ cup white sugar/brown sugar/dates sugar
1 tin of liquid milk or 1 cup of powdered milk or more depends on you
4 or more eggs depends on you and the quantity.
4 tablespoons butter, melted (for me, i don’t measure sha)
Lemon/orange zest (the back or peel of lemon/orange grated), optional
Variety Liquid Flavours
¼ cup of Raisins (or Fruits put in cake as nigerians call it)
½ coconut (freshly grated into a bowl)
½ teaspoon pepper (Cameroon/yaji (suya) depending on your taste buds and quantity
*Add all ingredients to list*
After sieving the flour, go ahead to mix the flour, lemon/orange zest, powdered milk flavour sugar, milk (cause I prefer powdered) and pepper together in a big bowl.
Then, whisk the eggs and beat to perfection. Then melt the butter in a non-stick frying pan. You should soak the raisins in warm water to soften it and remove the sour taste.
*This isn’t the simplest recipe out there but it’s my simplest and cause I Love my pancakes very rich, i put a lot of effort, especially with milk and eggs, which distinguishes me all the time.*
After melting the butter and it’s cold. Then pour the eggs in the bowl of powdered ingredients and whisk, then add the melted butter, if it’s still thick, you’d add little water.
*Note: 🥞 pancake mixture is forgiving
unlike cake mix but make sure the mixture isn’t thick or watery, just in-between. After all is done. You can add favours. I love using milk, banana, Pineapple and butterscotch flavours (the liquid one for cakes ni oooo, I’m extra sha🤩
. I use lots of eggs but i still use water).
Then, add the raisins and coconut, depending on the your choice or your client’s choice (it can be both or either of the package). When you’re done mixing everything, add 1½ tablespoon of baking powder to the bowl and stir evenly until it’s well mixed.
Then, Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides (or creamed to your choosing) and serve hot/warm/cold with chilled Hibiscus wine (Zoborodo)/GreenTea/Beverage/Smoothie.
It can go with any drink. The choice is Yours.
Aluminum foil can be used to keep food moist and makes clean-up easier.
